Over the last 18 months, Casa M Spice Co has created an iconic online presence. It started with building our award-winning website. We chose Shopify Plus as the platform to host our website and worked with 1Digital Agency, a Shopify Plus design and development partner, to build a website that would feature all of the elements we wanted to have in a website.
When we started working on the custom website design, we already had a logo created and wanted to establish a brand. We provided a color palette for the company to 1Digital and wanted them to take the elements of the logo and colors and implement them throughout the website design. The design was meant to be design heavy to feature high-quality photos of our food photography and our product labels. This allows us to introduce the products and show them with the ideal meat so that customers can easily know which spice applies to each recipe.
Our website was not limited to just product pages about the spice blends themselves. We continue to bolster our Recipes page so customers can try the many creations we have made over the years with the spice blends and the many possibilities that each spice has to offer. There is no limit to each spice blend. It can be used on everything from meat to fruits and vegetables to eggs and much more.
Another part of the web design was more about our own story. We include pages that told our story and showcased our team but also had a Brand Manifesto page that helped us communicate our mission statement. The design of these pages was of great importance because they allow us to build a relationship with the customer, for them to have an inside look at who we are and what we stand for and what to expect from our brand.
In addition to the design work, we also had a custom development project that allowed for an easier website experience for customers. This includes video elements on the home page, where visitors can select a spice blend and see more information and watch a video. The development also includes a feature on the recipes page that allows the customer to buy the recipe and automatically have all of the spices needed to be added to the cart. Good website development only enhances the website and the experience and is not a distraction from the purpose of the website. These features make the customer’s buying journey that much easier.
Another part of the work with 1Digital and the building of a brand has come through digital marketing efforts including SEO and PPC. This is a two-pronged attack that allows us to build relevant traffic and build rankings, both paid and organic, so we can reach many more potential customers.
All of these things factor into our award-winning website and struck a chord with the folks at the Fiery Foods Festival. Our brand is recognizable, our products are showcased in detail, our website is easy to navigate and has a great design. All of these aspects were rewarded in receiving this award.

]]>Preparing lamb chops requires quality meat, the right process, and great seasoning, and there is a way for you to get that in your own home as if you were your own personal chef with the skills of a great cook.
How can you do it? Simple: with the right recipe, the right ingredients, and a lamb chop rub that delivers an added flavor that fits perfectly with lamb and all of its natural flavors.
Today, we will show you two great ways to use lamb chop rub on both lamb and pork.
Starting any lamb dish requires you to have quality lamb meat that doesn’t have too much of a gamey smell or flavor right out of the packaging. If you can tell that from the packaging, you will certainly recognize it when you eat it. It is essential that you use a good product when preparing a lamb dish.
Start by preheating the grill to high heat and prepare the chops away from the grill to start. Place them on a cookie sheet and sprinkle each side of the lamb with both salt and our Good Shepherd™ seasoning. Let the chops sit for a few minutes so the rub adheres to the meat, then transfer them to the grill for cooking.
When the chops are on the grill, sprinkle more Good Shepherd™ seasoning on the meat and close the lid for two minutes to let cook. After two minutes or when you see grill marks, you can flip the meat and repeat the same steps on the opposite side, adding more seasoning to the meat and letting cook until grill marks appear.
Once that happens, remove from the grill, set the lamb chops up on a platter and serve.
You may be wondering what a lamb chop rub has to do with pork chops. Well, here at Casa M Spice Co™, we like to experiment and bring versatility into the kitchen. Just because Good Shepherd™ is our lamb dry rub made for lamb chops doesn’t mean it can’t be used on other dishes and different types of meat.
How about making pork chops with a lamb spice rub?
Pork chops can taste especially good when prepared in a smoker, but if you don’t have one, the grill will work for this recipe.
The process starts similarly to the lamb chops. Preheat the smoker to 160 degrees and prepare the chops away from the smoker, adding salt and the Good Shepherd™ seasoning to the surface of the meat and letting it sit so that it adheres to the meat.
Once that is done and your smoker is heating, place the chops into the smoker for 60 to 90 minutes and let them bathe in the smoke until the internal temperature is about 100 to 110 degrees.
Have your grill preheated to medium heat and move the chops to the grill, adding more Good Shepherd™ seasoning. Let each side cook for 5 to 10 minutes and reach an internal temperature that is at least 150 degrees but does not exceed 160 degrees. When it reaches this temperature, you can remove the chops from the grill, let sit for 10 minutes, and serve.

Once you have completed a dry brine and seasoned the pork shoulder evenly with the Whole Hog™ seasoning, heat your smoker to 225 degrees and load the pork shoulder in for cooking. It should take about 12 to 15 hours for the pork shoulder to cook properly and hit an internal temperature of 200 degrees. When the pork reaches this temperature, remove it, wrap it in foil and let it sit until the internal temperature reaches around 160 degrees. Once it has rested and reaches the desired temperature, you can start to pull the pork apart, place into a serving bowl and enjoy.

Place the brisket into a plastic storage bin for the dry brine. Sprinkle the brisket with ¼ teaspoon of salt per pound of brisket. Then season the brisket to taste with our Cattle Drive™ seasoning. Using our stainless steel shakers is the best way to do this and distribute spices evenly so the entire surface is covered. Cover the brisket and place in the refrigerator for at least two hours to overnight to dry brine.
Once the dry brine step is complete, you can start to set up the smoker. Load with a mix of woods -- we recommend hickory, mesquite and apple -- and heat to 250 degrees. Move the brisket to the smoker and let it heat up until the internal temperature of the meat reaches 200 degrees. This can take up to 12 hours to achieve the right results.
Remove the brisket from the smoker when the temperature reaches 200 degrees and let it cool to 160 degrees internally. If you are serving the brisket later, you want to wrap it in butcher paper and place it in a cooler to maintain the temperature, but if you are serving immediately, you can start to slice it up and serve.

Add a little bit of olive oil or Worcestershire to you dry spice blend to create an added layer of flavor and give the meat a substance that can hold the dry spices in place. Wet rubs also add moisture to the meat and prevent sticking when preparing. Wet rubs should be evenly coated around the outside of the meat. Any of our spice rubs go great as part of a wet round and taste great no matter how you choose to prepare your meats.
When you apply a rub, wet or dry, you want to make sure the meat sits long enough for it to have an effect when you start the cooking process. For a dry rub, you can prepare the meat with the seasoning and then start cooking in around 30 minutes and still get all of the great flavors that are packed into the dry rub seasoning. For a wet rub, it requires time to marinate and allow the juices to seep into the meat. This can require several hours to get the right flavor.
For most meat rubs for smoking, especially when applied as a dry rub, there isn’t much to preparing the meat on the grill or in the smoker. You can just place it directly on the grill or in the smoker and let it cook. Spice blends that have sugar in it do require a slightly different process. Remember that sugar can burn at 275 degrees, so you want to be mindful of that when grilling and spray your grates with cooking oil to prevent sticking.

Before you use a dry rub, you should know how to apply dry rub to get the right coverage on your meat so you get a great flavor. This works for all meats, not just chicken.
Once you have selected the meat, you want to have the grill already preheating before you start applying the seasoning. Rinse the meat with cold water and dry with paper towels. Before applying the seasoning, use olive oil to coat the meat and either brush it or use your hands to cover the meat evenly.
When applying the dry rub, there is a technique called wet hand/dry hand that works well. Use one hand to apply the dry rub and the other to rub it into the meat to seal in the flavor. Large meats like beef brisket and pork roasts need to be covered on both sides and you want to make sure you can cover the entire outer surface of the meat. Also, don’t be afraid of the amount of dry rub you use. The more you apply, the greater the flavor will be.

What goes into our smoked brisket dry rub? It all starts with a base of our Chain Reaction™ season-all that goes great with anything and everything. Made with all natural ingredients like paprika, salt, pepper, garlic, onion and ground chiles, it is a seasoning that brings together smoky and earthy flavors before leaving a lingering and building heat.
Our smoked brisket dry rub, called Cattle Drive™, adds to the Chain Reaction™ formula to create a low salt formulation that allows you to season to taste and not worry about oversalting. A touch of sugar in the spice blend creates that perfect outer bark to your brisket that makes it crisp and seals in the flavors.
Once you have that perfect brisket rub, you want to properly prepare your brisket so you and your family and friends can enjoy the delicious flavors done right. Before you prepare your grill or smoker, you want to complete seasoning the meat and let it sit at room temperature for an hour. Load your smoker with wood – we recommend using a combination of mesquite, hickory, and apple woods- and heat to 250 degrees. Place the brisket in the smoker and let it heat until the meat has reached an internal temperature of 200 degrees. This can take up to 12 hours. Monitor the brisket throughout the process, since it could take more or less than 12 hours.
Once the brisket has cooked and reached the proper internal temperature, remove it from the smoker and let it rest to cool to an internal temperature of 160 degrees. At this point, if you are serving the brisket later, you can wrap it in butcher paper and place it in a cooler to maintain temperature until you are ready to serve or you can serve it right away. When you do serve the brisket, carve the meat and enjoy.
