Using a dry rub is one of the best ways to season any pork, whether it is tenderloin, shoulder, ribs, or chops. Pork chops, in particular, can be a challenging dish because, while they can have great flavor, it is easy to overcook them and end up dry and with minimal flavor.
Today, we will tell you about how you can grill delicious pork chops and get a ton of flavor to make them your new favorite grilled meat.
Purchasing Pork Chops - The process for grilling great pork chops starts before you even start cooking. Choosing the right pork chops is just as important as preparing and grilling them. It is recommended that you use one-inch thick pork chops. This gives you enough meat to resist the heat and not overcook as opposed to thinner cuts where the heat will go through the meat quickly. For the best flavor, use a bone-in chop. The bone creates insulation for the meat, which locks in flavor and moisture during the cooking process.
Brining - You can do a lot to help your pork chops by brining them before grilling. Just a simple brine can keep the meat tender and give it a delicate texture. This keeps the meat juicy and flavorful. To create the brine, you can combine salt, sugar, and water into a large pan, cook until the salt and sugar dissolve and let the brine cool to room temperature before adding ice water. Place the pork chops in a resealable bag and pour the brine carefully into the bag. Try to remove as much air as possible before sealing the bag. To achieve the best results from brining, the meat should stay in the brine for between 8 and 12 hours and be refrigerated in a baking dish.
The Rub - Pork chops already come with great flavor, but you can take it to the next level with a great BBQ pork rub. Casa M Spice Co™ Whole Hog™ is a great dry rub for pork that is loaded with flavors that add spice, sweetness, and enhance the natural flavors of pork. The salt, black pepper, and paprika are great elements to a BBQ pork rub. Experiment with how much or little you want to put on your pork chops, but remember that the right rub can really give you a tremendous flavor for pork chops. Make sure the pork chops are completely dry after removing from the brine and add a light layer of oil to prime the pork chops before applying the rub. Please make sure the pork chops are evenly covered and let them sit at room temperature for 30 minutes before grilling.
Grilling - Now that you have prepared your pork chops, you are ready to grill. Start by making sure the grates of the grill are clean. You can oil the grates if needed. Bring the grill to a medium heat and gently place the pork chops on the grill and cover. Each side should take 4 to 6 minutes to cook. Be careful when flipping the meat and use tongs or a spatula so as to not stab into the meat. You run the risk of losing the great natural juice locked inside the meat by doing that. If you want to achieve those perfect grill marks, let the pork chops sear for 2 to 3 minutes and rotate a quarter turn to cook for 2 to 3 more minutes. Then flip and repeat the process for the opposite side. When the pork chops are ready, you want to check to make sure they are properly cooked. The internal temperature should read 140 degrees and, at that point, the pork chops can be removed from the grill.
