Season the steaks with spices
2 minGive the meat a good coating of both Cattle Drive® and Chain Reaction® — you want every surface covered so the seasoning bonds during the sear, not just dusts the surface.

Sear steaks 3 min per side in hot skillet
7 minSteaks will be rare; they cook more later

Let steaks rest 10 minutes
10 minReserve skillet with drippings for filling

Chop rested steaks as small as possible
5 minChop those steaks into pieces no bigger than a pea; the smaller they are, the better they'll hold the sauce and meld together in your empanada filling.

Cook vegetables, cilantro, and garlic 5 min
5 minUse reserved skillet with drippings

Add beef, soy sauce, lime, spices; cook 3 min
3 minYou're looking for the liquid to reduce by about half and darken slightly — that's when the flavors concentrate and the beef absorbs the soy and lime instead of swimming in sauce.

Add tomato sauce and cook 4-5 min
5 minKeep moist; adjust spice to taste

Fill and seal empanada discs with filling
12 minMoisten edges with water; press with fork

Fry empanadas until golden on both sides

Sear the steaks rare on purpose — they finish cooking in the filling and stay tender, not tough.
Don't skip reserving those pan drippings; they're seasoning gold for the whole filling.
Chop the beef small enough that it binds together when you bite it, not into chunks.

After searing the steaks and allowing them to rest and cool, you want to chop the meat into pieces as small as possible. These will be the main filling for the empanadas, so you want them pretty small for an even texture.
In the recipe you said..cut meat into 1/2 inch thick pieces…then you said add…” chopped beef”…is it, pieces of beef, or…chopped beef?..thank you….
