Broil salmon with root vegetables and two Casa M blends for a complete dinner that hits the table in under 30 minutes
Ingredients
For the Salmon:
- 6 salmon filets
- 6 Tablespoons olive oil
- to taste Casa M Spice Co® Chain Reaction®
- 3 Tablespoons Casa M Spice Co® Good Shepherd®
- lemon wedges for garnish
Pulling It All Together:
- 4 carrots, peeled, sliced thinly
- 1 pound fingerling potatoes, sliced thinly
- 1 yellow onion, thinly sliced
- 1/3 cup chopped parsley
- 2 Tablespoons olive oil
- to taste Casa M Spice Co® Chain Reaction®
- 2 Tablespoons Casa M Spice Co® Good Shepherd
- 1/4 cup water
Method
-
01
Heat the oven
5 minGet your oven to 350°F so it's ready when you need it. You want steady, even heat for the initial bake.
-
02
Season and bake the salmon
20 minLay salmon skin-side down on a lined pan, brush lightly with olive oil, then dust with Chain Reaction to season it through. Bake for 20 minutes — the gentle heat keeps the fish moist while it cooks through.
-
03
Start the vegetables
12 minWhile the salmon's cooking, heat 2 tablespoons olive oil in a skillet over medium-high until it shimmers. Add your carrots, potatoes, and onion, sprinkle with Good Shepherd, and toss well to coat everything evenly.
-
04
Steam the vegetables tender
10 minAdd water to the skillet and cover it — the steam softens the vegetables while the spices infuse. Once they're fork-tender, pull off the heat and fold in the fresh parsley for brightness.
-
05
Broil the salmon
3 minSwitch your oven to broil and slip the salmon back in for just a few minutes until the top colors and crisps. Watch it close — broiler heat moves fast and you want a golden top, not burnt.
-
06
Plate and serve
2 minLay down a bed of those steamed vegetables on each plate, then crown it with a salmon filet skin-side up. Hit it with a squeeze of lemon and get it to the table hot.
From Mike's Notebook
Slice your potatoes and carrots thin—they'll cook through in the same 12 minutes the salmon needs.
Toss vegetables with oil and Good Shepherd first, then arrange them around the salmon so nothing steams.
Don't wait for the veggies to soften completely; pull everything at the first sign of char on the edges.
