Cook steel cut oats in coconut milk once, grab a bowl straight from the fridge all week

Ingredients

Ingredients

  • FOR THE OATS:
  • 4 cups Silk coconut milk
  • 1/2 cup steel cut oats
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed meal
  • 2 Tablespoons almond butter
  • 1/2 teaspoon Casa M Spice Co® Jerked Chain®
  • PULLING IT ALL TOGETHER:
  • 1 banana, very ripe, mashed
  • 1 scoop greek yogurt
  • blueberries, blackberries, strawberries, etc.
  • roasted almond slivers

Method

  1. 01

Bring coconut milk to a boil

    8 min

Use a thick-bottomed heavy pot with lid, uncovered initially.

  2. 02

Dissolve almond butter into hot milk

    2 min

Mix well before milk reaches full boil.

  3. 03

Add oats, flaxseed, chia, return to boil

    3 min

Mix well, let just return to boil, then turn off heat.

  4. 04

Cover pot and let rest overnight

    8h m

Leave covered at room temperature for 8 hours minimum.

  5. 05

Mash banana into oats and mix

    2 min

You're looking for a smooth paste with no lumps—the banana should be fully incorporated and the mixture should look creamy and uniform before you add the liquids.

  6. 06

Serve with berries, yogurt, and almonds

    2 min

Refrigerate leftovers immediately; keeps up to one week.

From Mike's Notebook

01

Mash the banana into warm oats, not cold ones — it distributes evenly and sweetens without extra sugar.

02

Don't skip the overnight rest; the oats absorb coconut milk and soften completely without any cooking the next morning.

03

Steel cut oats need that full boil before resting — rolled oats will turn to mush by day three.
