Overnight soy-honey soak makes these wings dark and sticky, then high heat does the rest

Ingredients

FOR THE WINGS

  • 1 Dozen chicken wings
  • 1/3 Cup soy sauce
  • 1/2 Cup honey
  • 1 Teaspoon minced garlic
  • 1 Tablespoon Casa M Spice Co® Pecking Order®
  • 1/2 Tablespoon Casa M Spice Co® Chain Reaction®

FOR THE GARNISH

  • Parsley or green onion
  • Honey
  • Ranch dressing

Method

  1. 01

    Prep the wings

    5 min

Separate each wing at the joint and discard the tips — you want clean, meaty sections that'll cook evenly and take on that glaze.

  2. 02

    Make the marinade

    3 min

Whisk together soy sauce, honey, garlic, Pecking Order®, and Chain Reaction® until smooth. This is your flavor foundation, so mix it thoroughly.

  3. 03

    Marinate the wings

    2h m

Coat the wings completely in marinade and refrigerate for at least 2 hours—overnight is even better. That soy and honey soak deep into the meat and create the sticky, dark exterior you're after.

  4. 04

    Set up for baking

    3 min

Spread wings in a single layer on a foil-lined baking sheet and pour some marinade over them. For crispier wings, use a rack with a pan underneath to catch drippings.

  5. 05

    Bake until golden

    30 min

Bake at 375°F for about 30 minutes until cooked through and the glaze darkens up. Leave them in longer if you want them more golden and caramelized.

  6. 06

    Finish and serve

    3 min

Garnish with fresh parsley or green onion and drizzle with a touch more honey for shine. Serve with ranch, blue cheese, or our Hooked® on Green Goddess Dressing on the side.

From Mike's Notebook

01

Marinate overnight if you can—the soy penetrates deeper than the honey, so patience builds better flavor.

02

Pat wings dry before cooking, or the marinade steams instead of caramelizing into that sticky glaze.

03

Save some glaze before marinating raw chicken, then brush it on during the last five minutes of heat.
