Ingredients
FOR THE SHRIMP
- 2 Pounds large shrimp, cleaned, deveined, tail off
- 1 Medium yellow onion, sliced
- 1 Red pepper, sliced
- 2 Cups fresh pineapple chunks, cut thin
- ½ Cup olive oil
- 4 Tablespoons butter
- ½ Cup white wine (we used Pinot Grigio)
- 3 Tablespoons Casa M Spice Co Jerked Chain

Prep the vegetables and fruit
5 minSlice your onion and pepper into similar-sized slivers so they cook evenly, then cut the pineapple into thin chunks. Uniform cuts mean everything finishes at the same time.

Heat oil and melt butter
2 minBring oil to medium-high heat, then add butter and let it melt completely. You're building a rich base that'll carry all the flavors.

Deglaze with wine
2 minPour in the white wine and let it cook for about 2 minutes, which burns off the alcohol and leaves you with bright acidity to balance the heat.

Cook peppers and onions
5 minAdd your sliced peppers and onions, then let them soften for about 5 minutes over medium-high heat. You're looking for them to get tender but still hold their shape.

Add pineapple and caramelize
7 minLower the heat to medium, add the pineapple, and cook until you see the edges start turning golden and the oil shifts to a light yellow. That caramelization is where the sweetness develops and cuts through the jerk heat.

Cook shrimp with Jerked Chain
7 minAdd your cleaned shrimp and 3 tablespoons of Jerked Chain, then cook until the shrimp curl up and turn opaque all the way through—about 7 minutes. Don't overcook them or they'll turn to rubber.

Serve
Plate the shrimp and all that beautiful sauce over white rice or buttered noodles. Let the rice or noodles soak up every drop of that pineapple-butter situation.

Tail-off shrimp cook faster and absorb the pan sauce better than shrimp with tails on.
Don't crowd the pan — shrimp release water and steam instead of sear if packed tight.
Add the pineapple in the last minute so it stays firm and doesn't turn to mush.
