INGREDIENTS:
FOR THE PASTA:
- 1 pound fettuccini
- 1 stick (8 Tablespoons) butter, unsalted, room temperature
- 4 oz shaved Parmesan cheese
- 1 Tablespoon Ace Kickstart®
- 2 cups hot pasta water
LET’S GET COOKING
- Fill your pasta pot with water and add enough salt to taste like the ocean, then boil it over high heat.
- Cook the pasta according to directions, and it’s still al dente.
- When the pasta is finished, collect 2 cups of the hot pasta water, drain the pasta, and return it to the hot pot over the hot burner (but without heat).
- Add the butter to the top of the pasta and mix well until the butter is completely melted.
- Add the cheese and Kickstart® and keep mixing. As things get thick, add pasta water a little at a time to the pot while still mixing. Repeat this until the desired thickness/consistency of the sauce is achieved.
- Serve immediately!
