4 Anaheim/Hatch green chiles, roasted, peeled, seeded, chopped
12 flour tortillas, warmed

LET'S GET COOKING:
Preheat the oven or air fryer to 350F with a cast iron skillet inside to heat up as well.
When the skillet is hot, remove it from the oven, and put your Chihuahua in first, then the Oaxaca second. Give them a good stir, and return to the oven.
Cook for 10-15 minutes until the cheeses are melted together and bubbling, but prior browning (it makes the cheese tough not gooey and stretchy).
Serve in a warm tortilla topped with chopped chiles, cilantro leaves, and salsa.
