Crispy bacon and Chain Reaction spice turn basic guacamole into something that actually stands up to chips
Ingredients
FOR THE GUACAMOLE
- 3 Slices of bacon, roughly chopped
- 3 Large Haas avocados
- ¼ Cup finely chopped red onion
- ½ Cup diced fresh red tomatoes
- 2 Tablespoons finely chopped garlic
- 1 Jalapeno, seeded and finely diced
- ¼ Cup chopped, fresh cilantro
- 3 Tablespoons Casa M Spice Co® Uncontrolled Chain Reaction® seasoning
- Juice from one lime

Cook and chop the bacon
10 minCook bacon until crispy, then let it cool enough to handle and roughly chop it. You want those crispy pieces to stay intact and add real texture and smokiness to the guac.

Halve and pit the avocados
3 minDrag your knife carefully around the seed in each avocado, then twist the halves apart. This keeps the flesh intact instead of hacking away at it.

Scoop avocado into bowl
2 minUse a spoon to scoop the avocado halves into a large bowl — you'll have more control this way than trying to peel them.

Add remaining ingredients
2 minCombine red onion, tomatoes, garlic, jalapeño, cilantro, Chain Reaction seasoning, and lime juice into the bowl. The lime juice keeps the avocado from oxidizing while you work.

Mash and combine
2 minUse a wooden spoon to gently fold everything together and lightly mash the avocado — you want some texture left, not baby food. The spoon won't bruise the fruit like a fork will.

Taste and adjust
1 minTake a bite and add more seasoning, lime, or whatever else speaks to you. Trust your palate here — guac is personal.

Serve with chips or tacos
Get it to the table while the avocado's still fresh and the bacon's still got some crunch. This is best enjoyed immediately.

Render the bacon low and slow so it crisps completely; rushed heat leaves it chewy and won't distribute through the guac.
Cut avocados in half, remove the pit, then scoop into a bowl instead of mashing in the skin—better control over texture.
Fold in the Chain Reaction last so the heat stays bright and doesn't fade into the avocado's richness.
