For The Tomato Cups

  • 1/2 Teaspoon Casa M Spice Co® Pecking Order®
  • 1/4 Teaspoon Casa M Spice Co® Chain Reaction®
  • 4 Medium tomatoes
  • 2 Rotisserie chicken breasts, shredded
  • 1/4 Cup mayonnaise
  • 1 Cup canned or fresh white corn kernels
  • Salt and Pepper to taste
  • Chives, chopped for garnish

    Rinse and prep the tomatoes

    Give your tomatoes a quick rinse under cold water. You're working with a raw ingredient, so clean fruit matters.

    Core out the tomato cups

    Cut off the top of each tomato and discard it, then use your paring knife to loosen the inside edges and a spoon to scoop out all the seeds and pulp. You want a clean shell that'll hold your filling without falling apart.

    Mix the chicken salad
