Ingredients
For The Tomato Cups
- 1/2 Teaspoon Casa M Spice Co® Pecking Order®
- 1/4 Teaspoon Casa M Spice Co® Chain Reaction®
- 4 Medium tomatoes
- 2 Rotisserie chicken breasts, shredded
- 1/4 Cup mayonnaise
- 1 Cup canned or fresh white corn kernels
- Salt and Pepper to taste
- Chives, chopped for garnish

Rinse and prep the tomatoes
3 minGive your tomatoes a quick rinse under cold water. You're working with a raw ingredient, so clean fruit matters.

Core out the tomato cups
8 minCut off the top of each tomato and discard it, then use your paring knife to loosen the inside edges and a spoon to scoop out all the seeds and pulp. You want a clean shell that'll hold your filling without falling apart.
