Avocado, cilantro, and jalapeño come together in five minutes—use it as dressing or dip, either way it works
Ingredients
FOR THE DRESSING
- 1/2 cup Avocado Oil Mayonnaise
- 1/2 cup Crème Fraîche
- 1 Avocado, Ripe, Hass, diced fine
- 1/4 cup Cilantro, leaves only, plucked
- 1/4 cup Scallons, greens only, cut super thin
- 1/2 Jalapeño, fresh, fine dice
- 1 Tablespoon Casa M Spice Co® Uncontrolled Hooked®
- 1 teaspoon Lime Juice, fresh squeezed
- 1 teaspoon Apple Cider Vinegar
FOR THE GARNISH
- Casa M Spice Co® Uncontrolled Chain Reaction®
- black pepper, freshly ground
Method
-
01
Build the base
1 minCombine mayo, crème fraîche, scallions, jalapeño, cilantro, lime juice, apple cider vinegar, and Hooked® in a small bowl and mix thoroughly. Getting everything blended now gives the flavors a chance to marry while you prep the avocado.
-
02
Halve and pit the avocado
1 minCut the avocado in half lengthwise, then twist the halves apart and remove the seed. You'll have two clean halves with a small divot where the pit sat.
-
03
Score the avocado lengthwise
2 minHold one avocado half skin-side down in your palm with the divot facing up, then carefully run a paring knife lengthwise left to right in parallel lines without cutting through the skin. This crosshatch technique makes scooping cleaner and helps it break down into the dressing evenly.
-
04
Score the avocado crosswise
1 minStill holding the same half, cut perpendicular to those lengthwise cuts—top to bottom across the width—creating a fine grid. Repeat the whole scoring process with the second avocado half.
-
05
Fold in the avocado
1 minScoop the scored avocado flesh into the mixing bowl using a spoon and gently fold it in. You want it broken down but not pulverized—leave some texture.
-
06
Chill and set
150 minCover and refrigerate for at least 2–3 hours so the flavors deepen and everything melds together. If it's too thick when you pull it out, loosen it with a splash more lime juice or vinegar.
-
07
Season and serve
1 minGive it a taste and hit it with Chain Reaction® to balance the heat and brightness. Use it as a dip with chips or vegetables, or spoon it over salads, tacos, or grilled fish.
From Mike's Notebook
Dice your avocado fine and fold it in last—big chunks break down and turn the dressing gray.
Fresh lime juice matters here; bottled will make the cilantro taste metallic and flat.
Start with half the Hooked® and taste before adding more; it builds heat as it sits.
