Lime-marinated chicken seasoned with Pecking Order® turns a pizza crust into actual fajitas
Ingredients
For the Pizza:
- 1/4 cup lime juice
- 2 Tablespoons olive oil
- 1 teaspoon garlic, minced
- 2 chicken breasts, boneless, skinless, cut into small chunks
- 1 Tablespoon Casa M Spice Co® Pecking Order®
- 12" precooked pizza crust
- 2 cups red salsa, chunky-style, mild or medium
- 1 cup Mexican cheese, shredded
- 1/2 cup red bell pepper, chopped
- 1/2 cup red onion, sliced
- 1/2 cup black beans, cooked or canned, rinsed and drained
- cilantro, chopped for garnish (optional)
- sour cream, for garnish (optional)
Method
-
01
Build the marinade base
2 minCombine lime juice, oil, and minced garlic in a large skillet over medium-high heat. This aromatic base is going to infuse the chicken with bright, savory depth.
-
02
Season and sear the chicken
8 minToss chicken chunks with Pecking Order and Chain Reaction, then add to the hot skillet. Cook until no pink remains — you're building color and locking in that spice profile while the marinade does its work.
-
03
Chop the cooked chicken
2 minTransfer chicken to a cutting board and chop it fine so it distributes evenly across the pizza and stays tender. Set it aside.
-
04
Prep the crust
1 minPlace your precooked pizza crust on a baking sheet or pizza pan — this gives you a stable base for loading.
-
05
Layer the toppings
3 minSpread salsa as your sauce base, then layer chicken, peppers, onion, and cheese in whatever order you like. The salsa keeps everything moist; the cheese seals it all together.
-
06
Bake until melted
10 minBake at 450°F for about 10 minutes until the cheese is fully melted and all ingredients are heated through. You want that cheese slightly browned at the edges for real pizza flavor.
-
07
Garnish and serve
1 minTop with your favorite garnishes — cilantro, jalapeños, avocado, sour cream — whatever makes it taste like fajitas to you. Slice and eat hot.
From Mike's Notebook
Marinate the chicken chunks at least 30 minutes so the lime and Pecking Order actually penetrate the meat.
Drain excess salsa liquid before spreading on the crust, or your pizza gets soggy and won't crisp.
Scatter the cheese underneath the toppings so it anchors everything and browns properly on the crust.
