Crispy fried plantain cups stuffed with seasoned ground beef—ready to eat in under 20 minutes

Ingredients

For the Cups:

  • 1 pound ground beef (85%)
  • 1 teaspoon corn or canola oil
  • 1/2 yellow onion, chopped
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 1 Tablespoon garlic, minced
  • 2 Tablespoons Casa M Spice Co® Cattle Drive®
  • 1 teaspoon Casa M Spice Co® Chain Reaction®
  • 24 count Goya frozen plantain cups

Method

  1. 01

    Sauté the aromatics

    5 min

Heat oil in a skillet over medium heat, then add your chopped onions and peppers. This softens them and builds a flavor base before the meat hits the pan.

  2. 02

    Add the garlic

    1 min

Stir in the minced garlic and cook for about a minute until fragrant. Don't let it burn—garlic turns bitter fast.

  3. 03

    Brown the ground beef

    5 min

Add the ground beef and mix well, breaking it into small pieces as it cooks. You want it cooked through with no pink remaining.

  4. 04

    Season with Cattle Drive®

    1 min

Sprinkle in the Cattle Drive® and Chain Reaction® spice blends, mixing thoroughly to coat all the meat. This is where the flavor comes alive.

  5. 05

    Taste and adjust seasoning

    1 min

Once cooked through, taste the beef mixture and add salt as needed. Trust your palate—this is your chance to dial it in.

  6. 06

    Fry the plantain cups

    3 min

Fry the frozen plantain cups until golden and crispy, then let them cool for about a minute so they're safe to handle and the cups hold their shape.

  7. 07

    Fill and garnish

    2 min

Spoon the hot beef mixture into each crispy plantain cup and finish with fresh cilantro. Serve while the cups are still warm and the filling is hot.

From Mike's Notebook

01

Brown the beef hard before adding peppers—wet vegetables release steam and keep the meat from crisping.

02

Frozen plantain cups stay structurally sound; thawing them softens the shell and causes filling to leak.

03

The two spices work different jobs: Cattle Drive builds the base, Chain Reaction adds the sharp finish.
