INGREDIENTS:
FOR THE EGG SALAD:
- 8 hard-boiled eggs, peeled, whole, chilled
- 1/4 cup mayonnaise
- 1/2 teaspoon lime zest
- 1 medium lime, juiced
- 1 stalk celery, finely diced
- 1/4 cup scallions, dark green part, finely sliced
- 1/4 cup red onion, diced
- 2 teaspoons Casa M Spice Co® Ace Kickstart®
- 1 Anaheim chile, stemmed, seeded, diced (optional)
- 1 red jalapeño, stemmed, seeded, diced (optional)
- Casa M Spice Co® Ace Kickstart®, to taste
LET’S GET COOKING:
- Wash up and prepare to get your hands dirty with the mixing, because it’s by hand!
- Add everything to a large mixing bowl, then, with your hands, target the eggs and smash them with your fingers right on top of where the yolk is. Then with your whole hands, mix everything up. This process leaves large, non-uniform pieces of white while exposing the yolk to the mayonnaise and lime juice to form a thick sauce.
- Once well-mixed, taste and adjust seasoning with more Ace Kickstart® as needed.
- Use it anywhere you would serve egg salad!
