Lean ground turkey meets Pecking Order® heat and sharp pickled onions—skip the frozen patties

Ingredients

For the burgers

  • 4 brioche burger buns
  • 2 lbs lean ground turkey
  • 8 Tablespoons Casa M Spice Co® Pecking Order®
  • Salt to taste

For the garnish

  • American, cheddar, or any other cheese of preference, sliced
  • baby spinach to taste
  • Casa M Spice Co® Pickled Yellow Onions
  • Ketchup, mustard or any condiment preferred

Method

  1. 01

    Form the patties

    5 min

Roll each portion into a ball first, then flatten gently with your hands—don't pack it tight or you'll end up with dense, rubbery burgers. Turkey's lean, so a loose hand here keeps them tender.

  2. 02

    Season with Pecking Order®

    2 min

Hit each side with about a tablespoon of Pecking Order®, add salt to taste, then rub gently so the spice sticks and flavors the whole patty evenly.

  3. 03

    Cook the burgers

    12 min

Grill or pan-sear until cooked through—turkey needs to hit a safe internal temperature, so don't rush it or cut corners here. Medium-high heat, about 6 minutes per side depending on thickness.

  4. 04

    Toast the buns

    2 min

Lightly toast them in a toaster or set them offset from the grill flame for indirect heat. A toasted bun holds up to the toppings and adds a little texture and warmth.

  5. 05

    Build and serve

    2 min

Layer your toasted bun with the cooked turkey burger, cheese, spinach, and whatever condiments you like, then crown it with those Casa M Pickled Onions for that sharp, bright finish that makes all the difference.

From Mike's Notebook

01

Mix the Pecking Order® into the turkey before forming patties—seasoning only the outside won't penetrate lean meat.

02

Form patties slightly thinner than you think; turkey cooks faster than beef and dries out if overcooked.

03

Toast the brioche buns buttered-side down while burgers rest—it anchors the pickled onions so they don't slide.
